So Sunday was the first time I have ever made spaghetti squash and boy was it tasty! We roasted it for about 40 mins at 400 degrees, shredded the flesh, and then topped them with marinara sauce and some cheese. It tasted like pasta! We told the girls it was pasta in a boat and they loved it! It was super filling though and Robb and I could have probably shared just a half.

Mmm...isn't spaghetti squash yummy?! You can actually prepare it in the microwave too. It takes 10-15 minutes instead. We just cut the halves, scoop out the seeds and then cover the cut end with plastic wrap and place that side down on a plate or in a bowl. Then pop it in the microwave.
And, just in case you ever make it again, they are easier to cut if you go around the other way, so it looks more like a bowl. This follows the grain of the "spaghetti" strands better. :) I'm too wimpy to cut it the long way. And, it makes a pretty good side dish too, just add a little salt and it's good to go.
